Во время учебы в институте Сергей Ивановичу пришлось прервать свое обучение на несколько лет для того чтобы отслужить срочную службу. Свой трудовой стаж он начал зарабатывать в 1990 году после окончания института, в коммунальном управлении Хмельницкого на должности экономист. Достаточно быстро он стал ведущим бухгалтером. Вскоре Мельник пригласили в городскую администрацию на должность заместителя руководителя отдела финансов. Уже в 1998 году он становится заместителем мера Хмельницкого и занимается вопросами исполнительной власти. Совсем скоро его назначают руководителем финансового департамента. В начале двухтысячных годов Сергей Иванович продолжает подниматься по карьерной лестнице. В 2006 году принимает решение избираться на должность главы города и побеждает в выборах. Через четыре года он также одерживает победу и становится второй раз подряд мэром города. Параллельно с основной работай, Мельник принимает активное участие и в политической жизни страны. Он является постоянным членом партии «Батькивщина», начиная с 2005 года.
